Tempura di ostriche con caviale di salmone




SettembRe, comincia la stagione delle ostriche. A dire il vero a me non piacciono. E non mi piace nemmeno la tempura (che per chi non lo sapesse è un tipo di frittura giapponese con pastella). Però devo dire che si presentano molto bene e sono un'ottima idea per un bel aperitivo.

Ingredienti per 6 persone:

  • 12 ostriche (se trovate quelle "facili da aprire" ancora meglio)
  • 100 gr farina
  • 100 ml acqua ghiacciata
  • 1 uovo
  • maionese giapponese (in alternativa va bene anche la maionese normale)
  • salsa di soia
  • 30-40 gr di caviale di salmone
  • olio di semi
  • sale grosso da cucina
Per prima cosa preparate la pastella per la tempura sbattendo l'uovo con l'acqua ghiacciata e aggiungendo la farina setacciata fino a ottenere un impasto non troppo consistente e privo di grumi. A questo punto riponetelo in frigo per almeno 15 min. Nel frattempo aprite le ostriche con l'apposito coltellino (ma io non ce l'ho e uso l'apriscatole, prima o poi posto il video). Asciugatele con della carta assorbente e conservate la valva inferiore di ciascuna. 
Versate l'olio di semi in un pentolino abbastanza profondo per poter friggere e portatelo a 170 C (posto che non so quanta gente abbia un termometro da olio in casa diciamo che un buon metodo empirico può consistere nell'immergere nell'olio una goccia di pastella: appena torna in superficie la temperatura è giusta).
Passate le ostriche nella farina, poi nella pastella e infine mettetele a friggere per alcuni minuti finché la pastella non sia leggermente dorata.
Nel frattempo mescolate 2 cucchiai di maionese con un goccio di salsa di soia.
Adesso siamo pronti per impiattare.
Con un cucchiaio formate un mucchietto di sale grosso per ciascuna ostrica e adagiatevi sopra le valve che avevate conservato. Ponete dentro le valve l'ostrica fritta e guarnite con un cucchiaino di maionese e alcune uova di salmone.

Le notti arabe: l'hummus



Fresco, magro, proteico, perfetto come antipasto estivo e, se siete donne in menopausa (lo dice Samantha, eh), 
un ottimo sostituto per integratori ormonali.
Altro non è che una crema di ceci molto diffusa, con alcuna varianti, in tutto il medio oriente.
Personalmente l'ho provato per la prima volta grazie al ragazzo ebreo di una mia amica, coltivatore di rose in Etiopia ed ex pilota di carro armato, che lo portava direttamente da Israele. Poi mi sono accorto che farlo è una caxxata.

Ingredienti per 4 persone:
  • 400 gr di ceci bolliti, cotti in pentola a vapore (per far prima vanno benissimo anche i ceci in scatola già cotti...)
  • 1/2 spicchio d'aglio
  • 1 cucchiaio di olio
  • il succo di un limone
  • sale
  • paprika in polvere
  • prezzemolo
Frullare i ceci con l'aglio, l'olio, il succo di limone e un pizzico di sale. Servire in una coppetta dopo aver cosparso di paprika e prezzemolo. In Israele è spesso accompagnato da della panna fresca. Ottimo con pane arabo, piadine o patatine ondulate.

La cena di San Valentino - 1 antipasto: cocktail di gamberi

Cavolo, Stitch e io siamo già al secondo San Valentino (auguri Stitchino!), e finché avremo voglia di festeggiare dire che è meglio approfittarne!
A esser sincero non ero assolutamente in cooking mood ma alla fine sono riuscito comunque ad arrangiare una cenetta dignitosa a base di pesce in appena 1 ora e mezza!
Certo, sono stati necessari alcuni compromessi e il primo fra tutti è l'antipastino, un grande classico il cocktail di gamberi anche se ormai penso (spero!) non vada più di moda neanche ai matrimoni calabresi...
Ingredienti (rigorosamente per 2!):
  • una decina di gamberi di media grandezza
  • qualche foglia di insalata verde
  • maionese, ketchup, Sherry (o Cognac)
Sgusciare i gamberi e bollirli in acqua bollente per 5 min. Nel frattempo amalgamare in parti uguali maionese e ketchup sino a ottenere una salsa rosa e aggiungere un goccio di Sherry. Preparare 2 coppette, spezzettare la lattuga e adagiarla sul fondo delle stesse. Mescolare i gamberi con la salsa rosa e versare il tutto nelle coppette. Lasciar riposare in frigo per almeno 1 ora prima di servire.

Happy S. Valentine's dear Stitch! It's better to celebrate till we're still gonna be in the mood of!
To be sincere I was totally in a no-cooking mood but finally I managed to arrange a decent fish-based dinner in just 1 hour and 1/2! Proud of myself!
Well this needed some compromises, first of all the appetizer, a classic prawn cocktail that nowadays I think (rather hope!) it's out of fashion even at weddings in Calabria!

Ingredients (strictly for 2 people!):
  • 10 medium size prawns
  • a few leaves of green salad
  • mayonnaise, ketchup, Sherry (or Cognac)
Peel off the prawns and let them cook in boiling water for 5 mins. In the meanwhile mix same quantities of mayonnaise and ketchup till obtaining a pink sauce and add some drops of Sherry. Prepare 2 small cups, break into pieces the salad and put on the cup bottoms. Mix the prawns with the pink sauce and pour it all in the cups. Let it rest in the fridge for at least 1 hour before serving.

Tramezzino gorgonzola, sedano e mela - Sandwhich with gorgonzola cheese, celery and apple


This afternoon I had such a profound longing for this gorgeous sandwhich that I decided to face the snow storm to buy the ingredients. I had tasted it for the first time during a business lunch. Before that I simply could not have ever conceived such a weird combination. Nevertheless that it was so delicous!

Ingredients:
  • 50 grs gorgonzola cheese (if you can't find it you could try with the roquefort, it should be different, though)
  • 1 apple granny smith quality
  • 1 celery stick
  • 2 slices of sandwhich bread
Spread a thick layer of gorgonzola on one side of each slice of bread. Cut the apple and the celery into thin slices (I used a potato peeler). Lay over the gorgonzola some apple slices first, the celery ones later.
Close the sandwhich.
Cut it into 2 triangles.
Eat.

Gypsy things aka "Zingarate" at the Artisan's Exhibit in Milan


If you wanna have lunch or dinner for free just go to the Artisan's Exhibit  ("Fiera dell'Artigianato") held in these days - till tomorrow Sunday 11 - in Milan. If you were smart as me, though, you would avoid to go there during the weekend.

Anyway, you will find tons of sample tastes of cheeses and cold cuts (mainly salami) in the Sicilian, Calabrian, Puglia and French stands. I did not take pictures because I was simply too busy in eating.

Apart those zingarate, the sad thing is that you can easily spot the difference between the diverse areas of Italy: deep south brought nearly only food; centre, there was food (mainly pork roast) and some manufacturers (textiles); north, nearly only manufacturer and factory stands, with a notable exception (for me, at least): the marinaded garlic from the Franciacorta (Brescia) area.

The look is totally garlic, but taste is damned good and it does not smell at all! Internet tells me that it's not something typical from Brescia and that it's very easy to prepare home. Anyway, I bought this jar of marinaded garlic, pizzaiola recipe, and will probably use it as part of some aperitivo:


Oh, btw, Have you seen the pic with the chocolate tools? Nice in the shape but far too expensive for being just a mediocre chocolate. Anyway, I was with a Russian friend who liked them and bought kgs...
