Muffins dietetici


Ho scoperto da poco i muffins, all'inizio pensavo fossero un'americanata carina da guardare ma immangiabile, adesso invece non riesco quasi a farne a meno. Il problema è che tra uova, burro, cioccolato (che ci sta eccome) sono GRASSI. Ho quindi in parte trovato, in parte rielaborato questa ricetta per dei muffins "dieitetici". Diciamo che fatto 60gr il peso di un muffin, uno "normale" (poi naturalmente vista la varietà di preparazioni i valori possono mutare sensibilmente) dovrebbe contare circa 220 Kcal, 7 gr di grassi, 30 gr di carboidrati, 4 gr di proteine e 2 gr di fibre. Uno con gocce di cioccolato dovrebbe arrivare intorno alle 270 Kcal, 9 gr di grassi e 35 gr di carboidrati.
La mia ricetta dietetica, che prevede anche una farcitura, dovrebbe invece aggirarsi sulle 150 Kcal, 1,9 gr di grassi, 23 gr di carboidrati, 8 gr di proteine e 4 di fibre. Bontà a cuor leggero, altro che Kinder Bueno!

Ingredienti per 6 muffins:
  • 120 gr di farina
  • 60 gr di farina integrale
  • 1/2 cucchiaino di lievito in polvere
  • 1 uovo
  • 150 ml di latticello
  • 1 cucchiaino di marmellata di arancia o di lamponi senza zucchero
  • 1 cucchiaino di succo d'arancia
  • 1/2 cucchiaino di scorza d'arancia
Farcitura:
  • 100 gr di yogurt greco senza grassi (tipo Fage)
  • 1/2 cucchiaino di scorza d'arancia grattuggiata
  • 1 cucchiaino di marmellata senza zucchero
  • 100 gr di lamponi, ribes o altri frutti di bosco
Mescolare le due farine col lievito, in un'altra scodella sbattere leggermente l'uovo, aggiungere il latticello, la scorza e il succo di arancia e quindi incorporare il tutto assieme alla farina (non c'è bisogno che si amalgamino perfettamente, basta dare qualche mescolata col cucchiaio).
A questo punto riempire le formine di uno stampo per muffin (meglio se antiaderente, sennò si puo' ungerlo leggermente con un po' d'olio) riempiendoli per circa 3/4 e far cuocere in forno preriscaldato a 160C per 25-30 minuti, finché non saranno dorati. Togliere i muffin dal forno e spennellarli con un cucchiaino di marmellata.
Preparare il ripieno mescolando lo yogurt con la restante marmellata e la scorza d'arancia e farcire i muffin con questa crema e qualche lampone, ribes, o altri frutti di bosco.

Con questa ricetta, visto il bel rosso dei ribes e dei lamponi, nonché gli ottimi valori nutrizionali e il ridottissimo contenuto di grassi, partecipo al contest "Get an Aid in the kitchen"

"Diet" or "nearly fatless" muffins

Muffins are quite a recent discovery to me. At the very beginning I thought they were an America style cute-to-watch-but-inedible sweet thing, however now I can hardly do without them. But the problem is that eggs, butter, chocolate (which is the perfect add-on) are FAT. So I partly found, partly re-elaborated this recipe for "diet" muffins. 
Let's say that a 60 grams "normal" muffin (but of course, given the variety of preparations, the values ​​may change significantly) should have approximately 220 calories, 7 g fat, 30 grams carbohydrates, 4 grams of protein and 2 grams of fibers. One with chocolate chips should arrive at around 270 calories, 9 grams of fat and 35 grams of carbohydrates. My nearly fatless recipe, which also includes a filling, should be instead around 150 Kcal, 1.9 g fat, 23 grams carbohydrates, 8 grams of protein and 4 grams of fiber . Goodness light!

Ingredients for 6 muffins:
  • 120 grams of flour
  • 60 g of wheat flour
  • 1 / 2 teaspoon baking powder
  • 1 egg
  • 150 ml of buttermilk
  • 1 teaspoon orange or raspberry jam without sugar
  • 1 teaspoon of orange juice
  • 1 / 2 teaspoon orange zest
Filling:
  • 100 grams of fat-free greek yogurt (like Fage)
  • 1 / 2 teaspoon grated orange zest
  • 1 teaspoon sugar-free jam
  • 100 grams of raspberries, currants or other berries
Mix the two flours with the baking powder, in another bowl beat slightly the egg , add the buttermilk, zest and orange juice and then stir it all together with the flour (doesn't need to become a perfect mixture).
At this point, fill the holes of a muffins mold (preferably non-stick, otherwise you can anoint it with a little bit of oil) about at 3 / 4 and bake in preheated oven at 160C for 25-30 minutes, until they are golden. Remove the muffins from the oven and brush with a teaspoon of jam.
Prepare the filling by mixing the yogurt with the remaining jam and the orange zest and fill the muffins with this cream and some raspberries, currants or other berries.
